Have you ever tried Kosher chicken? It saves you from having to brine and kosher meat is always excellent quality.

I have not brined a chicken in years.

I have never been to the place mentioned, but I do know that when I brine chicken to grill at home, it almost always stays really pink at the bone even when cooked til well-done and verified with a thermometer. Creeped me out pretty badly when I first started doing this. Not sure what the place in question might be doing to cause this.

In a somewhat separate section from the takeout food counter, there is a refrigerated butcher display case with several flavours of premarinated chicken legs. I asked for two of the ones marked "spicy." These aren't huge legs, but they do come with the hip bone attached so it adds up to a decent portion. About $7 for both.

I grilled them up this evening to a safe internal temperature of 74ºC and wow, what a flavour explosion! Deep tangy spices, a lively level of heat, and a wonderfully succulent interior made it impossible to choose which one I liked more. The cost would add up for a crowd, but if you're cooking for a small number of people you'd be hard pressed to find anything else so tasty in the world of ready-to-cook meats.

We just polished off a 2 kg organic chicken from Farm Boy. Roasted it for 75 minutes at 425 Fahrenheit (convection) in the upright "beer can" position, with white wine in the steam tray and "Montreal chicken spice" and pepper all over the outside. Also three rashers of bacon draped over the top for some extra self-basting activity.

We poured off the fat from the steam tray and made a nice gravy with the remaining juices. This was an excellent roasted chicken -- crispy outside and moist inside.

Also a good job on their crispy deep-fried chicken! This dish is normally ordered when my boys are having dinner with us. Who say "No" to crispy chicken!

We got a whole fried chicken and totally feasted on it. Very nicely done and highly recommended!

Their boneless, "skinless" chicken breasts are quite tasty and are consistently a reasonable price (regularly $5.99 lb, occassionally only $3.99/lb). However, I have been known to complain about how much fat and skin there is left on the breast--you jsut have to be a bit picky with whomever is serving you.

love the chicken here and frequently buy whole birds and boneless skinless breasts.

i can't remember the name of the supplier but the butcher has remarked it's the best he can get, for the scale/# he needs, next to going to a local farm. i believe it's the same supplier The Piggy Market and a few other local shops use.

the chicken is incredibly moist and seems almost impossible to dry out when BBQing (a good thing!)

I don't think I can eat supermarket chicken ever again after tasting this chicken from Lyons Family Turkey Farm.

Thanks for the tip that they have the 3 chicken carcasses for $1 the same as 168 used to have!
