I don't know how to become a fan but anyone with the name Da Butcher is my kind of guy.

I picked em up at Produce Depot on Carling. They seem to stock them on a semi-regular basis. $3 for a medium sized cluster of them, they have a nice flavour and are in immaculate condition every time I've bought them (no slimy, crushed, or obviously mishandled ones).

How are you controlling the temp and humidity for your hams?
