you're gonna love my nuts! (spicy smoked peanuts) [Recipes]

Spicy Smoked Peanuts

Ingredients
500g Salted Blanched Peanuts
Frank's Hot Sauce
Melted Butter

-Thoroughly mix peanuts with a liberal amount of Frank's and add 1tbsp or so of melted butter (I used Franks "Xtra" Hot to add some kick)
-Smoke at 200-225F and hit with 1-2 hours of hickory smoke
-Stir periodically to ensure all nuts are dried, this could take anywhere from 3-6 hours

If you don't have a smoker you could try doing this in a dehydrator or an oven.

Look delicious. My recipe is super simple aswell. toss in fish sauce(i know....wtf, trust me) chili powder and a pinch of cayenne, and roast in oven. fish sauce provides the saltiness plus a little more!

Monty - check ingredients on asian style roasted nuts the next time you go to T&T or any other asian food store for inspiration... cheese powder, fish sauce, shrimp powder, etc.

A (small) splash of fish-sauce is a surprisingly tasty addition to popcorn, as well -- an accompaniment that often surprises the unaware (what the heck is that topping?).

An interruption to the main thread topic, but one i thought Monty might allow for in relation to his generosity / status as one of Ottawa Foodies' primary popcorn providers. ;-)

sourdough - coated with the ingredients, then straight into the smoker for ~2 hours at 200F+. after smoking they go directly into the oven to roast at 225F-250F (they are already dry at this point, but roasting them a little more gives them some extra crunch).

bobby fillet - they're fabulous! nice smokey flavour and the fish sauce gives them that extra salty kick.

OK, I tried this today - added some hot sauce and honey to the fish sauce and chili powder. Unfortunately mine kinda flopped. Specifically if you are adding honey, watch out you don't burn your nuts! I bit dark out of the smoker - way too dark out of the oven - my own fault. Still edible - my son is enjoying them, and I'm still going to eat them - but clearly I can make some improvement with my technique.

sourdough yeah i'd watch too much sugar/honey if you're roasting for a few hours. try it again sometime, basically any time i have anything in my Bradley i will throw in a tray and bring a bunch to my office. might as well maximize my puck usage!

i did some smoked party mix yesterday, it was a big hit.

5 cups Crispix Cereal
2 cups Pretzels
2 cups Peanuts
3tbp Vegetable Oil
1tsp Garlic Powder
1tsp Onion Powder
1/2tsp Lawry’s Seasoned Salt
3-4tbsp Hot Sauce

-Combine cereal, pretzels, and peanuts in large bowl
-Drizzle with oil and toss until well coated
-In small bowl stir together garlic powder, onion powder, seasoned salt, and hot sauce
-Drizzle over cereal mixture and toss until well coated
-Smoke 40min to 1hr at 225F-250F
-Finish on a cookie sheet or baking dish in the oven at 250F, if needed

Friends are having us over to dinner Saturday to watch the fights and I remembered this form so I thought I would fire up the Bradley and smoke some nuts to bring over. I modified monty's recipe to use Brazil nuts,almonds,peanuts,cashews,walnuts and pecans with three quarters of a cup of Franks 4tbs of butter and some pink flake salt 1.5hrs hickory smoke in the Bradley then into the oven on slow cook for two more hours and at half way a spinkle of chipotle powder. The pecans and walnuts really stand out. Thanks monty for the recipe!

I have some peanuts here that are somewhat similar- but bought from Nuts online- Buffalo peanuts.

they use hot sauce and also some sugar in the coating w salt- so it is sweet,spicy and salty!
no smoke though. but they are very tasty!
I think adding some sugar would also be nice! and maybe cracked pepper?
