Crêpes [Recipes]

So I made crêpes tonight stuffed with my morels, goat cheese, asparagus, and some bacon with a drizzle of truffle oil (why not?).

Then I made blueberry rhubarb & goat cheese stuffed crêpes for dessert.

So what are your favourites in a crêpe?

Suzette, flambeed, for me. Raspberries and cream cheese with raspberry coulis are the runner-up.

Us girls like strawberries sautéed in a little olive oil with sugar, lemon and cinnamon. And whipped cream. And the guys like bacon and syrup.

That looks awesome! My favorite is the ham, cheese mushroom and egg, preferably on a street in Paris. For dessert the Nutella and banana combo is a fav. Also sugar and lemon juice.

I'm a "crepe salee" kinda guy. Forestiere is probably my favourite...bechamel, ham and mushrooms, then baked in the oven.

My favourite are the fresh ones with Nutella on the beach in the evening in St. Raphael in the south of France... or maybe it was just being in the south of France that made it so darn tasty =)

I ordered crepes with strawberries, cream, walnuts and basil for breakfast while on holiday in San Rafael a few weeks ago. It was 9am, and it came with ice cream. Can't say I was disappointed.

Nutella crepes are amazing... but nutella has been banned from my household since it mysteriously disappears in about 2-3 days after purchasing. All things nutella/gianduja/hazelnut are highly addictive to me.

There's a fairly decent crepe place in Toronto called Cafe Crepe, that I always went to when I was young (now it's more the nostalgia value). Their crepes with lemon juice and sugar were always my favourite. Currently my favourite is ham and brie, plain and simple.

But, this thread reminded me of an experience at Cafe Crepe, when my friend Mandy and I went for lunch. All was going well, waiting for dessert, when our (cute) server came by with two hot chocolates, balanced on the edge of the tray. He was trying to get passed another server and dropped both hot chocolates all over Mandy, who was covered head to toe.

Anyway, he apoplogized profusely, and the restaurant paid for the dry-cleaning bill (and our meal). But, she sadly had to walk around Toronto all chocolatey for the rest of the day.

Asparagus and chicken in a chardonnay sauce; leftover roast turkey with broccoli and toasted almonds; or banana and nutella--but only in Europe. I swear nutella tastes better over there!

On a side-note. What (vegetarian) fillings would work for freezing crepes without them getting all gross when defrosting/reheating?

Obi - was thinking about that very combo as I was driving by Pelican today (with their hot smoked salmon), maybe a few minced capers & lemon juice whipped into the mascarpone.
