You hit the nail square on the head Fresh Foodie. Fall off the bone is usually a tell tale sign of boiling and that would be considered cheating. Ribs should have a bit of chew to them IMO.

New User 2591, in defense of their facts (if not their attitude), you will find that most hardcore BBQ aficionados consider "fall off the bone" ribs to be undesirable. As you discovered, most hardcore BBQ aficionados hold strong opinions and are not afraid to share them. :-)

A friend from work recommended we try D&S Southern Comfort BBQ, so we drove over an hour to go there and we were very disappointed.
Not at all what we expected. We expected the baby back ribs would be the kind to fall off the bone and be tender, they were not. We had a heck of a time even cutting through the ribs. I eventually gave up. I will say that the flavour of the BBQ was nice, but that's as far as it goes.
We told our waitress right away that we were not enjoying the ribs, but nothing changed. At the end of the meal she asked us again how the meal was and we told her it wasn't what we expected and didn't enjoy it. She then went to get a woman, (I assume a manager) and she proceeded to LECTURE us on what Texas BBQ is. Very, very rude woman. She needs to learn how to deal with their customers properly.
Needless to say we will not return there and we will definitely not recommend this restaurant to anyone we know. Don't waste your time going there.

Had not even heard of D&S before Ken V's report, and I'm glad he brought it up.

My SO & I enjoyed the food. Friendly service and very new and clean.I don't have much more to add that Ken didn't mention already, but I do have some pics.

Worth the drive.

Made the trek out to Carlsbad Springs this evening to try out the smokhouse. The place is giant inside and all brand new. Service was friendly. We started with the giant onion rings. Very good a close second to Dicks. My main dish was the smoked beef shoulder clod with beans and cornbread. I didn't enjoy it that much only because it was more a sliced roast beef,a bit tough and dry. Clod is usually tender and jucy and able to pull apart easily. The beans had a beer flavor to them and were firm. The cornbread had chunks of corn in the patties and very moist. My wife had the smoked chicken leg with the spicy apple bbq sauce. Predominant smoke ring and very nice flavor. We shared the armadillo eggs,pork sausage meat balls shaped like eggs stuffed with cheddar and jalapenos. Our other sides were fresh cut fries and hush puppies both very good. I will be going back to try the assortment of smoked ribs and deserts soon before final judgements.

D&S has 3 types of ribs (beef, St. Louis Style, and pork back). I had the Kitchen Sampler which came with 2 St Louis style ribs.

Crispy bark, tender meat, sweet and smokey sauce. Not overly big or meaty, but very tasty. Smoked low and slow over hickory.

Great Hush Puppies - crispy outside, soft inside. Little jalapeno in the puppies give a little kick.

Piled high, very tender. BBQ sauce does not overpower the pork.

Smoked chocolate cheesecake. The smoke gives a slight bitterness to offset the richness of the dish.

The Chocolate Triple Threat: "Chocolate hazelnut pot du creme, orange chocolate tart and a Bailey's truffle".

We split the truffle first, which was rich and hinted of Baileys.

The tart tasted like a sophisticated Terry's chocolate orange.

The pot du creme tasted like a mousse (is that what pot du creme is?). Either way, it was a decadent and delicious end to the meal.

Breaded Onion Rings - big cruch, big onion. Served with a chipotle mayo dip. Chipotle was very mild but the dip complimented the rings well.

I'm not a huge fan of breaded onion rings (I prefer battered) but these were good.

This portion was in the Kitchen Sampler combo.

The wings are served whole, marinated, dusted then hickory smoked, then drizzled with sweet and smokey sauce.

Two whole wings came in the Kitchen Sampler.

The wings are about a medium to large size and is relatively meaty. The skin is not very crispy, but tasty.

You can taste the smoked flavour in the meat. The rub and the smoke in the skin are also really good. You could eat these as is, but BBQ sauce is drizzled on. The sauce is Sweet & Smokey (they also have Spicy Apple and Creole) and is just shy of being to sweet for my tastes.

If you liked smoked wings, you'll like these.
