Scapes and Cherry Tomatoes [Recipes]

I hope I'm doing this right...

I had scapes from the Carp farmers market I wanted to use up so I decided to chuck dinner together. Somehow my best food is always this chuck togethers.

I melted a knob of butter in the skillet over medium low heat and added olive oil. Chopped the scapes and added them to the skillet. Kept the cherry tomatoes whole and chucked those in too.
Cooked a couple hand fulls of spaghetti to just under al dente. Picked some oregano, ripped it up and added it to the scape/tomato mix just after adding in ripped up spinach.
Drained the pasta and added it back to the pot. Cracked two eggs in and tossed the pasta with tongs until the egg is lightly cooked, then added the pasta/egg mixture to the other pot. Flipped it around a bit and plated it.
I had grated some parmaseano reggiano but decided against it. The dish was plenty creamy without the added cheese.

The kids gobbled up dinner and went back for seconds. I wouldn't change at thing about the dish. Though next time I'll try whole wheat pasta for the heck of it (I have no admit I'm not a whole wheat pasta fan as the texture bothers me).

Garlic scapes = yum

Dice, and saute w/ wild mushrooms in butter & olive oil. Serve w/ balsamic, crumbled roasted walnuts & shaved parmesan cheese. My mouth is watering at the thought.

Hey BB: Your 'Chuck Together' looks great, and I'm sure it was quite yummy. I betcha lots of us Ottawa Foodies do chuck togethers. The best way to develope a new dish.

Scapes .... Here is something that I never had (along with Foie Gras). I think I will try them sauted with a little red pepper and home toasted almond slivers.

Hey Foodies ... Any local restaurants featuring scapes ?? How are they prepared ??

Surely someone in this government town serves a Garlic Scape-Goat Cheese Soufflé ? Hehehe.

Scape soup - was prepared at the Carp farmers market by Michael Blackie at a demo along with cream, triple cream back 40 artisan cheese, spinach a little stock, seasoning, et voila.

Edit: sauteed scapes & asparagus make a good combo as well. I made a frittata with sauteed asparagus, scapes, roasted red pepper and goats cheese... delish.

chimichimi~ Mmmm sounds good with the mushrooms. There's something else I miss about living in Seattle - all the fabulous wild mushrooms at the farmers market.

Bakingbombshell - there's a guy who cultivates shiitake and oyster mushrooms at the Carp Farmers market... the shiitakes are good, but the oysters are mindblowing.

Bakingbomshell that dinner looks delicious!

And to everyone else who posted here so far thanks for the suggestions! I tried scapes a couple of weeks ago for the first time and used them for pesto since that is the only thing I could think of to do with them. Shoulda thought of asking ottawafoodies! I tried some enoki mushrooms that I got at the Lansdowne farmers market last Sunday which went into a risotto - now I will have to go back for some more to pare with some scapes!

Yesterday I processed up a 2 huge bunches of scapes with olive oil. Because of concerns expressed here about food poisoning I froze excess in mini muffin forms to make little pucks, and tonight I'll vacuum seal them. I also took the rest of the stuff destined for the fridge and nuked it fairly well in the MW first, to heat it up and kill anything currently living in it.
