Also Saslove's has buffalo burgers but I don't know about other cuts.

Yup, Saslove's has other cuts too. They have cryovaced cuts in the chiller furthest from the door (Market location). I've cooked the bison striploin from there and it was pretty damn good.

Bison is a curious meat, while I like it, others I've dined with have found it a bit offputting due to the high iron content and the resulting somewhat sanguine flavour. Then again, these are people who typically like their steaks to be vulcanized with no trace of blood/moisture to be found.

I should experiment with a dry aged cut of bison... maybe that will be my next photo journal experiment.

Thanks everone for the info. I will try Sasloves. I'm looking for a roast to smoke. The vendor I tried last year at the farmers market only had frozen.

You can find fresh Buffalo meat at Loeb in the Glebe. They also have bio meats(buffalo, chicken, beef, etc. etc.)

perhaps old news to people in this thread, but my interesting discovery for the day was a President's Choice "Bison" burger available in the frozen food section @ Superstore / Loblaws. (Not quite what this thread is about, but still...)
