What are you eating on Boxing Day? [General]

We are eating tonight the same thing we had last night. clockwise from top left, cornbread pancetta and apple stuffing, mashed potato cream cheese and onion casserole, honey ginger carrots, homemade pickled turnips, melon pickles and gherkins, roasted brussels sprouts/squash/chestnuts, turkey, also not pictured: pomegranate cranberry relish, sweet potato biscuits, homemade fennel and raisin bread and pecan cranberry pie with bourbon whipped cream. It was all too good not to eat again tonight.

OG nice pig porn....I had 9 or 10 born xmas eve.... still trying to find them burrowed in straw. They are all doing well.
Xmas breakfast is tomorrow at the homestead. Bacon, waffles w/ home made maple syrup and eggs.
Plan to celebrate Ukranian xmas this year with perogies :)

krusty the potato "recipe" is under the mashed potato thread. Carrots are just cooked with a little butter honey and grated fresh ginger. Sprouts/squash/chestnuts are tossed with olive oil and some fresh thyme and roasted at 425 for about 20 mins. Am currently begging for the recipe for the cranberry pecan pies :)

I was alone Boxing Day - hubby and daughter had to head for Windsor for a funeral, while I had to work. So, at work, they brought in lunch (retail) - Pizza pizza and various snacky/sugary stuff from WalMart.
Dinner was pho leftover from dinner the day before (we went to Pho Bo Ga 2, and I foolishly ordered a large). Then I snacked on popcorn while perusing facebook and getting more bad family news.
I hope next year, I can manage to be a little more festive.
