Timtimo Recipe? [General]

My husband had a gathering at work, and one of his colleagues brought an incredible dish that was rolled up injera bread and a wonderfully savoury red paste (like a jelly roll). He brought the leftovers home and I fell in love. I had my husband ask what the paste was, and his friend told him it was a mix of lentils, lemon juice and chili. I think there was more to it than that (garlic? onions?) and after some surfing, it looks like it was timtimo? But there are no recipes online.

Can anyone help me out?

Sounds good so I had a look and came up with this recipe from an Eritrean site: www.healthy-life.narod.ru
Another possibility is a lentil zigni dish, though I couldn't find a recipe but one with meat could be adapted by using lentils.

Lentils in a Savory Sauce (Tum'tumo)
Servings: 4

Ingredients:
2 Cups Lentils
1 Medium Onion, chopped
3 Teaspoons Olive Oil
1 Teaspoon Salt
1/2 Teaspoon Berbere or Hot Sauce
1 Can Tomatoes, chopped
Can Tomato Paste
2 Cloves Garlic, chopped

Cooking Instructions:
Bring lentils to a boil with 6 cups water. Simmer for 20 minutes. Saute onion in oil until browned. Add salt, berbere, tomatoes, tomato paste and 1/2 cup water. Simmer for 5 minutes. Add garlic and lentils. Simmer for another 5 minutes and serve with injera or pita bread.

if i were you, i'd go to the ottawa organic food market and ask at the stall Ecostere. they make ethopian sandwiches that sound like what you describe. they have mild & hot and veg or meat. it is a lentil mix rolled up in injera and is fantastic. they also have a stall at the landsdowne farmer's market, but that is closed until the spring.

i've found that everything is great from Ecostere. they are also very generous with their samples if you want to try before you buy.

I used to pick up a loaf of their sweet potato cinnamon bread about once a month from Landsdowne for breakfast... delicious by itself, but if you toast it slightly and put some butter on, you reach the sublime level.

Their sweet potato bread is awesome as is the lemon bread, slightly toasted, then spread with a little honey - yum!
