roasting pumpkin is no different than roasting any squash.
for any pumpkin i make into pie, i do more than mash the squash, i will either put it through the food processor or hand mixer. the finer the mix, the nicer the texture in the pie.
also, for roasting the seeds, i always leave some gunk on the seeds. it makes it more flavourful. rinsing them seems to leave them drier and chewier. i pick out most of the gunk and them put them on the cookie sheet. i generally make spicy ones, but do them up any way you like and then roast them.
