Oysters can be eaten half shelled, raw, smoked, boiled, baked, fried, roasted, stewed, canned, pickled, steamed, broiled (grilled) or used in a variety of drinks. Preparation can be as simple as opening the shell, while cooking can be as spare as adding butter and/or salt, or can be very elaborate.

You can get fresh oysters at La Pointe fish market in the Byward Market - I've seen em there.

If you want them pre-made for you, Beckta has as excellent oyster plate as an appie (this may be seasonal however so no idea if it's always on the menu), also, there is "Big Daddies Crab Shack and Oyster Bar" on Bank Street and another location on Fisher (no idea if it's any good though). Cans of smoked oysters should be available at most supermarkets.

FINALLY went and tried not only oysters for the first time, but caught Vardy on his last night in Ottawa!
I asked the server which oysters I should try being my first time and she suggested one from the east coast (PEI) and one from the west. The bigger one on the left in the pic is west and the smaller east. I tried the east first and it was smooth and the texture creamy almost. Then I tried the west and it was completely different than the PEI oyster. West was 'fishy' tasting and had a grainy texture. Both were good but I definitely preferred the east coast oyster.
