Is it nitrates, or nitrites? I see these seemingly used interchangeably?

Prague powder 1 contains sodium nitrite and is usually what is used for bacon

Prague powder 2 also has sodium nitrate in addition to sodium nitrite. It is usually only used for dry curing things that will not later be cooked.

Panera already boasts no artificial additives and hormone free poultry...

However I can most definitely tell you that all of their meat products come pre-cooked and frozen (steak, turkey, chicken etc). Same goes for all the soups as well. They are then thawed and served on various sandwiches, salads etc. The majority of products are also imported from the US.

Any hot food items with the exception of the soup, eggs, and panini's (broth bowls, pastas etc) are all microwaved.

Doesn't seem that fresh tasty anymore does it? Unfortunately I know this all to be the reality from a direct source.

Glad to hear they are changing up there bacon because the past pre-cooked vacuum sealed packages still make me shudder.

Clean bacon is simple... don't use it to clean the floor.
Sadly, I imagine it will get a lot of traction.

I'm currently on my 6th week of a bacon cleanse, but I don't think that's the same thing.

I do enjoy their bread and bagels. Not sure if they are frozen or made on site but the chewy consistency and shiny crust is missing from most of the places in Ottawa that sell baked products. Tuesdays you can get a bakers dozen bagels for $8.

I went to Panera in the US many years ago and remember finding to be a good/healthy alternative. So I was pleased to see that they came to Canada/Ottawa. BUT ... I went once last spring with my family and I was not impressed at all. The sauce on the macaroni and cheese was extremely rich in a very artificial non-cheese way (not like KD or anything). I did not like my salad all that much, it might have has some of that pre-cooked and frozen chicken in it, can't remember exactly. In addition, I did not find the bread all that exciting. Not sure if there is more than one Panera in Ottawa, we went to the one on Hunt Club near the Lowes. Not really an area we go to all that often anyways. Won't rush back. Much prefer taking the kids to Burrito Gringo on Merivale Rd - just love it - the kids' size burrito is more than enough for me and you get the whole kids' combo with a drink for about $5! They know how to cook their meat ...

Does their bacon also contain phosphates or celery extract?
I am trying to not eat any meats that contain phosphates-I have a lot of problems with that ingredient.

Sort of "off topic" but Pelican fishery they used to sell shrimp with no phosphates and now pretty much all their shrimp have it.
-I used to buy shrimp there almost every week and now that store has gone backwards and just stocks the cheaper, more profitable for them shrimp full of chemicals.

But now farm boy has phosphate-free frozen shrimp!
Farm Boy also used to have bacon w no phosphates or nitrites (I think), but have not seen any lately at the Bank st store...
