Raw Milk, again [General]

I know we have a couple of threads relating to raw milk already, and I've said before that I've enjoyed Raw Milk over the years. This article came over my desk today to add to the controversy. I offer it for your information.

The article discounts some of the alleged benefits of drinking raw milk and reinforces the dangers. But I will probably still drink it from the vendor that I trust, just because I like the taste.

I doubt the miracle cures proposed by raw milk advocates as well. Though pasturization does change the milk aside from killing bad things in it. I find my cheeses don't always work when I have tried to use pasturized milk in it. Raw milk cheese is hard to screw up. Some porn for your reading pleasure....raw milk brie in process with about 4 days growth of fuzz which needs to be completely covered in mold growth before wrapping and also a couple pounds of butter from raw milk which sat out on the counter for 24 hours at room temp!

Oh and my fridge has a regular supply of raw milk feta, cottage and ricotta in it so I guess I am going to raw milk hell ;)

homogenization destroys the character of milk far more than pasteurization. I pasteurize raw milk when I get it, and it is way different than store bought stuff

Zym....I run my 'drinking milk' through a cream separator as drinking that much fat is too much for me! Though using some 'bandit butter' from above makes a lovely pate brisee in this evening's apple pie. The fall is a great time for baking pies :)
