mayan heirloom squash [General]

Picked up a bag of 6 of these at costco the other day. I think they were around $3 IIRC. Info I find on the web says they can be sliced and treated like zucchinni. Has anyone done anything interesting with these?

I've hollowed them out and stuffed them with a rice mixture and baked. I also saute onions, garlic,the squash and add fresh tomato and basil at the end, salt, pepper and some grated parm.

They have a very similar taste to zucchini.

how seedy are they in the middle? you could seed them, then slicy razor thin (veggie peeler or mandoline). lightly saute with garlic and olive oil, then toss with fresh pasta, toasted pine nuts and parmessan cheese, plus freshly ground pepper and salt.

i do that recipe with young zuchinni all the time. it is also nice to serve on freshly grilled pizza dough - cook your pizza dough on the bbq (i go freestyle), then brush with a little olive oil and top with the cooked squash, pine nuts & parmessan cheese. some hot pepper flakes are also nice.

Thanks all! They were not too seedy in the middle, and we ended up cutting them into wedges and sauteeing them in butter, shallots and garlic. They did taste almost exactly like zucchini, but they seemed to hold their shape well when cooked. I like all the recipe ideas and will try them eventually. Thanks again!
