Caul Fat [General]

From which animal? Lavergne Western Beef sells it from pigs. They call it "Leaf Lard". Just ask for it at the counter.

Hmmm, I was under the impression that leaf lard is not at all the same as caul fat. Depending on what you are making, you can't sub leaf lard for caul fat. Could be wrong of course, but here's how I understand it:
Back fat - from the layer of fat from the back of the hog, great pork flavour so good for cooking/frying. here's a photo: www.devonrose.com
Leaf lard - from the fat that runs along the kidneys, very subtle flavour and widely used for pastry and baking. here's a photo: living-land.ca
Caul fat - the lace like fat that comes from the intestines, used for soap making and some culinary dishes. very neat photo of caul fat: francesdepontespeebles.com
I have no idea where to get it from a store, but we'll have more in the fall if you can't find any. I only have backfat & leaf lard available right now.
