Easter Egg Leftovers [General]

FF's comment on how they eat thier Easter Eggs got me thinking - how do YOU use up your left over Easter Eggs. With more than one child in our household growing up, we each got 1 dozen eggs to dye, leaving my mother with 24 hard boiled eggs, or more if friends or family came over. You can only eat so many egg salad sandwiches and deviled eggs! We had a special dish for Easter called "Eggs Goldenrod". The hard-boiled egg whites are mixed with a creamy white sauce and served hot spooned over toast, the yolks are pressed through a seive (or grated) and sprinkled on top. We always had this for dinner, thought it may seem like more of a breakfast dish. So simple, but sooooo delicious. Hmmmm...I didn't dye eggs this year, but maybe I'll make this dish for Easter anyways....

So any other recipe gems for left overs?

Potato and egg salad. I like it 'eggy' so it can usualy get rid of atleast a half dozen.

I'll second pickled eggs too... yum.

It's work, but nothing beats that Brit pub fave, the Scotch egg. Plaster the shelled hb egg with loose sausage meat, or ground pork or beef, seasoned to taste. Dip in beaten egg, then bread crumbs or Panko. DEEP FRY until dark golden brown. Let cool while you go out for a six pack. Pop tab, drink deep, eat egg. Then another egg. Then another.
