bacon fat [General]

What to do with it.

I already have about a half litre of the stuff. I'm cooking off a kilo of bacon bits now to start the Caesar salad season, so I'll have even more.

Suggestions?

Don't say to put it on toast. I can only eat so much toast.

Diced potatoes and onions, sure.
Barbecued fritatta, of course.

Use it as you would any other fat or in recipes that require some kind of fat.

Make biscuits, do some baking, confit chicken (or anything), pan fry anything in it, blend into soups to add richness, make hollandaise.

It's a fat...treat it as such keeping in mind that you might still need to adjust your recipes as bacon fat has more moisture content than other types of fat such as butter or coconut oil.

Large scallops seared in a cast iron pan in bacon fat tastes awesome. So does icelandic cod, walleye, and halibut.
