Green Bacon [Cooking]

anyone ever do green bacon?

there are probably lots of different versions - I know at least two or three from the butchers i used to work with

costco had really nice pre-prepped belly slabs. at first it looked like 4 slabs about 2 or 3 inches long each but later turned out to be 8 that were half that size

1.87kg so about 4 lbs.
3 tbs salt
2-3 tsp ground pepper
3-4 tablespoons brown sugar
twice as much maple syrup
2 medium sized cooking onions, diced

it has been curing just over 24 hours and i am too lazy to tend to the BGE so I just tossed it in the oven.
