Your Favourite Pad Thai [General]

I cannot offer a local place, because I have the same problem as you.
I can offer, however, that Alton Brown's recipe is perfect IMHO. Not candy-sweet, not overly ketchup, not too sour.
When I'm craving it, I make it. Because when I'm craving it and try a local place, I am disappointed...and then I'm out the money and still craving it.

Thanks a lot. Now I have to go out for lunch.
My go to is easy, because it's just across the street from where I work at Tunney's Pawsture. It's the Golden Thai stall in the food court at Holland Cross. It's a heavy pile of lunch, made in front of your eyes. Mmmmmm. Not sweet at all. Not very saucy, now I think on it.
Still, filling and cheap.

Here is the recipe from an Ottawa restaurant that 'The Citizen' printed 20 years ago.

Where is everyone's favourite place for Pad Thai?
IMO it's one of the hardest dishes to make, and really varies in quality. Some places it tastes like icing sugar, some places it tastes like ketchup and when I make it the tamarind overpowers everything and it's way too sour, likely because I can't bring myself to add enough sugar.
My favourite place would have to be the Siam Bistro, but it has been a while since I've been there.
