Fun with sausage and bacon [Cooking]

Why settle for just bacon, when you can have bacon stuffed with sausage?

We had some pork bellies that we thought were a bit too small for using as bacon, so when they came out of the brine, I stuffed one belly with some of our Chorizo, and another with some of our Farmers sausage. I rolled them up, tied them, then hubby smoked them.

The picture below is how it turned out after smoking and slicing.

You know you can slice a full size belly flat along the thickness (along the flat plane -easier to roll) and make this any time you want? :)

Yes, that is true. I might have a hard time convincing others in the family to do that with the larger bellies though.

And besides, this is such a yummy way to put the wee little bellies to good use. ;-)
