What are you looking for? [General]

We've been trying to figure out what people are looking for when they visit a butcher shop (likely like most other shops in town). We prepare what we _think_ people want, and much of what we produce sells well, but it's still a guess.

So, I thought since this group of folks are really interested in food, you might be willing to say what you want from a butcher shop. Are you looking for particular prepared products (rillette, confit, lunch stuff, store-made sausages, ...?) or are you looking for the cuts that are more difficult to find (hanger steak, flank, brisket, other?), or perhaps you're looking for a custom prepared fresh item that you can cook (e.g. crown pork roast)?

What gets put out in any shop will be heavily dictated by the neighbourhood. Some neighbourhoods are more diverse and can sell trotters, offal, and some of the more obscure cuts while others are more mainstream. It's all good, just different.

What are you looking for (cuts, quality, price, something else)?

House-made rillettes would be awesome!

As cuts go, apart from the "regular" ol' beef rib steak, striploin, and tenderloin, I'm always looking for hanger steak (I had 100-day wet-aged stuff once and it was phenomenal), and would love to get stewing beef that's just from the neck. I've seen several recipes that recommend the neck.
