As I said in the amateur food porn thread on 2012 Oct 24: it makes 2 or 3 servings so I had to double it. Mustardy good! I think a nice grilled sausage would be in order here ... I added some mustard leaves for extra mustardy goodness. An especially tasty dish with garlic, potatoes, kale, capers, lemon, olive oil, and Dijon. Yum!

Tried this one recently and it was delicious, definitely a keeper: smittenkitchen.com
Also have this one in fairly constant rotation: kale and apple, both cut into matchsticks and with enough apple that you get a good amount in each bite (I use Gala); a little kimchee, chopped small and to taste; then dress everything with some apple cider vinegar, olive oil and s&p. Easy and very good.
It so happens that I have a ton of kale already clean and chopped for salads in my fridge right now, so am going to try Andy's recipe too. Sounds great!

It makes a *lot* of dressing, so scale back unless you think you can use half a liter in the near future.
We used some old, hardened Gruyere instead of the Manchego cheese. I'm sure Parmesan would work fine too.

Curried Potato Kale Galette
Love this recipe - basically a pimped up version of scalloped potatoes. Great side dish for just about anything.

My former room mate who was 100% certified Dutch used to make Boerenkool Stamppot all the time. It was erg lekker. Not to mention gesellig (since he's always share it)
