Let's talk lunch [Cooking]

This fall is shaping up to be a very busy time for me so I am now finding I am squeezed for time that I could be spending in the kitchen. I tend to go out during weeknight evenings so I like spending the weekends at home cooking up batches of homemade soups and casseroles and baking cookies and muffins. Last winter I started doing once a month cooking and it saved me alot of time in the kitchen on those busy weeknights. I am now well equipped with dinner recipes I can make over the weekend then freeze. But I could use a little help with lunch ideas. I love soup and already have tons of recipes but I am trying to think of other things I can make for lunch over the weekend then toss in my lunch bag before I head off to work. So, fellow foodies, what do you like to take for lunch that can be made ahead? I would love some inspiration...

Burritos - Tortilla, filling of choice, cheese, roll and freeze

Pulled pork/pulled chicken/turkey - all freezes well and all you need to add is a bun, pita or tortilla

marinated and spice rubbed roasted chicken thighs on the weekend can become tons of interesting things during the week. Chicken/pasta salads, wraps, chicken salad sandwiches etc.

Various salads are nice.. pasta salad, greek salad, potato salad, bean salad, coleslaw, couscous, taboleh and so on..

Stir frys
