Rice pudding recipe? [Recipes]

Ok, this forum totally came through for me when I was looking for a good pudding recipe, and to boot gave me an awesome mousse, and flourless cake recipe in this thread here: Forum - chocolate pudding recipe? #new

I am now looking for a good tried and true rice pudding recipe. Same criteria as before, simple ingredients, sets well, etc. Whether it's chocolate or vanilla is not an issue.

Any ideas?

It's ridiculous to say that I never thought of using Arborio rice to make this where it is the perfect ingredient for rice pudding. I always just made it the way my mom made it.

Here is a recipe on Epicurious taken from My Egyptian Grandmother's site. Not my grandmother. You know what I mean. It's simple and delicious.

I'm looking through my Seductions of Rice book now to see if I can find a better one. There are 7.

Nope. There are a few that use some different quantities and different ingredients like cardomom or saffron. I like that recipe above the best.

Hmmm, Think I could sub the arborio for sushi rice? Because I've got 11 kilo's of sushi rice, but no arborio.

I might try and make the rose water too, I've got a few blooms left on the bushes outside. Would save me a trip to town.

Love the idea of almonds in the rice pudding! I'll try the recipe this week and see how it turns out!

The whole point of sushi rice is that it retains its shape after cooking. Arborio rice breaks down a bit and gets really soft and creamy. You'd be better off using regular rice in that case.

That recipe has no eggs and you could probably cut the sugar down to 1/2 a cup because the reviews say it is way too sweet as written.

I haven't made this recipe, but it looks like a good one. I know that you asked for a decent recipe from the people here because you wanted one that you know will work. Otherwise, you'd just do an internet search for recipes.

But my hope was for a recipe that some has used and knows for certain that it's a good'un!

Good to know about the rice though.
