Looking for a Veggie Burger Recipe [General]

Anyone have any good veggie burger recipies? Please do not send me searches - I know how to google. I am looking for a tried recipe.

I like this one:

Ingredients ◦
¼ c boiling water
◦2 T bulgur wheat
◦4 c mushrooms, cleaned, de-stemmed, and sliced
◦½ c onion, diced
◦½ c lukewarm water
◦½ c rolled oats
◦2/3 c brown rice, cooked
◦½ cup mozzarella cheese, shredded
◦2 T cheddar cheese, shredded
◦2 T cottage cheese
◦½ t salt
◦½ t garlic powder
◦black pepper
◦2 T cornstarch
◦1½ T olive oil

Directions Place bulgar wheat in small bowl, cover with boiling water, and let sit for 1 hour (it will swell).
Steam the mushrooms 10 minutes or until tender. Set the mushrooms aside in a small bowl, then steam onion 10 minutes, until translucent. Transfer to a large bowl. Place oats in a third small bowl, cover with lukewarm water, and let soak about 10 minutes, until soft.

Drain bulgur wheat and oats, then place in food processor along with mushrooms, rice, cheeses, and spices. Pulse 4 or 5 times until ingredients are chopped but not puréed.

Pour the mixture into the onion bowl, add cornstarch, and mix well. Shape mixture into six patties.

Preheat oven to 300.

Over medium-low heat, warm 1 T olive oil. Cook the burgers for 2-4 minutes, until lightly browned, turn, and repeat.

Oil the baking sheet, place the fried burgers on it, and bake 10 for minutes. Turn them over and bake another 10-15 minutes.

I used to love the old nutburger they made for years at Daphne and Victor's on the market. Can anyone approximate that? Never had one as good since they closed.

The closest I came was a recepie for "Walnut Balls Bechemel" from a book called The Vegeterrian Epicure that was all the rage in the 70s. Cannot, unfortunately find it at the moment! If it turns up, I'll post.

refashions - I have no clue how to pm...ummm will have to check it out.

I have tried ALOT of veggie burger recipes! Family dislikes most of them. Main reason is mushy, beany recipes! I am fine with those but 1 out of 5 wins the argument! So far the only one they seem to like (a bit) has no beans - it is mostly veggies. shredded sqaush's, carrot and cheese...some egg, flour, oatmeal, cajun..mmmm yum if anyone is interested I could dig it up. Not really a burger but more like a veggie patty.

I think I will try PanBagnat's first then move on to the other recipies in the other forum! I would really like one that resembles the veggie burgers you can get in food basic's and loblaws (cannot remember the name) but with less or no soy and gluten flavor.

A friend used to work for Daphne & Victor and had the recepie. Enjoy!

Daphne & Victor's Pecan Burgers

Makes 24 burgers but the recipe can be cut in half.

4 cups almonds with skins
2 cups pecans
3 stalks of celery (cut in 1 inch pieces)
2 medium onions ( cut in 1 inch pieces)
2 cups chopped carrots
3 tablespoons minced garlic
6 eggs, beaten
2 tablespoons fresh ginger, minced
2 tablespoons dry basil
1 bunch parsley, chopped
1 tablespoon salt
Fresh ground pepper
2 cups breadcrumbs
2 tablespoons vegetable oil ( for frying)

Pulse nuts in small batches, fine but not to a paste.
Remove nuts and pulse celery, onions, carrots to same consistency.
Place all in a large bowl and add all other ingredients (if mixture is too wet add more breadcrumbs)
Shape into 4 oz. patties. Fry in preheated oil.

D & V used to serve it with a traditional mornay sauce (make a roux with milk and flour and add grated cheddar cheese)
Also can be served with with a salsa or relish of any ki

I made the "Daphne & Victor's Pecan Burgers" last night for my sisters birthday.
The only modifications:
-I put the nuts through my omega to get a very fine grind
-I baked the burgers as the stovetop was being used for cooking the rest of the meal

These burgers were absolutely amazing! My mom said it is the best veggie burger she has ever had in this city :)
It does make a whole ton so I only baked as many as needed and froze the rest on baking sheets. I'm hoping this will not affect the integrity of the burgers when I take them out...

Is this made with fresh breadcrumb or dried breadcrumb?

I make my own breadcrumbs in the food processer. I use day old bread torn into large chunks and pulse for a few seconds. It is quite fine, like the dry you buy, but soft.

Thought fresh breadcrumbs would make more sense but thanks for the clarification.

I used dry ones from the grocery store, it worked quite well...
Next time I will try to make my own, I had never thought to try!
