2008 Oct 11

2 potatoes, peeled and shredded with cheese grater.
2 Tbsp butter
salt & pepper
onion powder
garlic powder

Wrap shredded taters in tea towel and squeeze all the water out. The drier the better.

Melt butter on medium in pan.

Season taters with whatever you want.

Toss them in the pan with the butter and spread them out in a thin layer.

Cook covered for 5 minutes. Do not stir!

Flip over and cook covered for 5 more minutes.

Serve immediately.

I actualy never bothered to make my own until earlier this year but when I did a few times, I just shredded right into a heated cast iron pan with butter, s&p to taste.

I'll try squeezing out the water, adding some garlic powder. Sounds great.

Sounds great. I'd add that Yukon Gold's make nicer hash browns than white potatoes. And I'd do a second flip at the end, uncovered, to make 'em nice and crispy...
