Major score! My wife brought home a box of PC Organics Cornmeal Muffin Mix (480g). I was delighted to find it an acceptable substitute for my beloved Jiffy brand, which I am out of until my annual Christmas basket from my family back in Florida.

At $2.99 / box it is considerably more expensive than Jiffy, but factoring in plane tickets, I consider it a steal.

The resulting muffins were equally moist, but a little less sweet. The box makes 12 good sized muffins. 6 were consumed with our ribs tonight, the other 6 are destined to be turned into croutons (YUM).
