Vanilla beans come from several sources around the equator and are the stamen of particular varieties of orchids. They are 'killed', and then cured in the sun for months until they reach a properly desiccated state and are suitable for use in cooking. The vanilla seeds (known as caviar) are often scraped from the bean to use in baking and are most well known as 'those specks' in vanilla ice cream. The beans are also used in the production of vanilla extract and vanilla sugar.

We used to carry Madagascar, Tahitian, and Mexican vanilla beans for our customers. The demand is so high now that it is impossible to find them.
I found about 200g of small Tahitian vanilla beans in the back of a cupboard if someone needs them. These are the last vanilla beans we have in stock.
