Looking for high gluten flour [General]

I have not seen it around, but you can buy gluten at Bulk Barn or at supermarkets (with the Bob's Red Mill products). It is about 75% protein, so you can do some math and add it to all purpose or bread flour to get your target percentage. Or just add about a TB per loaf to bread flour if you are math averse. Works fine.

Thanks for the advice. What brand/sort of bread flour to you use and where do buy it from? Doesn't necessarily need to be King Arthur, just need to find some bread flour and I can check the protein % from there. Then if it's too low I can always use your suggestion and add some more gluten to it.
