fried tomatoes [Recipes]

Fried tomatoes.

It's kind of a tomato gravy that you spoon over well-buttered toast, and we live on the stuff this time of year.

Get a box of Ontario field tomatoes (not beefsteak) and slice them thick. Dredge in flour, salt, and pepper (to taste, but lots of pepper), then fry in bacon fat. If you cut the bacon into pieces first, that works. Keep the pieces in the pan.

Don't try to make discrete tomato slices. Let them fall apart. Fry gently over medium heat and turn once in a while. Eat when done.

Keep it simple. Don't go all crazy with exotic ingredients like onions.

It's easy. It's delicious. It's what's for dinner right now!
