Creamed spinach [General]

Has anyone got a good creamed spinach recipe, similar to what they would serve in a good steakhouse? I've geen trying a few different ones I've found online, but nothing has been quite right so far.

great creamed spinach...

you'll need a fair bit of spinach...one of the large clam shell type packages from the grocery store.

a pot of salted boiling water.

blanch the spinach for about 45 seconds in the water.

transfer it to an ice water bath.

strain the spinach then squeeze out the remaining water in the spinach by ringing it out w/ a towel.

make a bechemel...any recipe will do... (butter, flour, milk, onion, nutmeg, etc) don't forget to strain it!

mix the bechamel and spinach.

make a crust w/ some bread crumb and parmesan.

bake it or broil it.
