Here's a recipe for a salad that can keep up to 2 weeks in the fridge. It's great, i always make it for lunches at work. If anyone has other similar recipes (for the sake of variety in my lunches), please post them! :)
Here we go:
19 oz chickpeas
19 oz red kidney beans
14 oz yellow beans
14 oz green beans
1 cup spanish onion, minced
1/2 cup green bell pepper, diced
drain and rince all beans and veggies. Mix together, add the onions and peppers.
1/2 cup italian dressing
1/4 cup white vinegar
1/4 cup apple juice
2 tablespoons splenda (or sugar)
1/2 teaspoon salt
1/4 teaspoon pepper
Mix together the dressing ingredients and add to the first mix. Leave everything together overnight in the fridge.
