Just a guy who likes food and enjoying restauranting with his wife. After discovering that she has a gluten-based health concern (Celiac's Disease) and we have had to modify our lifestyle to accommodate it we have been confronted with the challenge of "gluten-free" (no gluten-based ingredients in the product) versus "gluten-free" (free from gluten-based ingredients and cross-contamination).

I felt that creating this profile and providing feedback based on our experiences via this site would be helpful for those of you out there confronted with the same challenge. Particularly given that the label "gluten-free" is applied in two very different contexts which may lead to accidental misrepresentation on the part of a restaurant or retailer.
