Now is the time to be thinking about a thick, meaty, bean dish made with pancetta and duck confit and sausages and stuff. Mmmmmmmmm. Sounds so good. It'll take half-a-day to make, but we really want to give it a try.

Any ideas where I might be able to find Toulouse sausage? Pork, garlic, and red wine. Sounds yummy. I imagine that where I can find that, I'll be able to get some duck confit. I can get pork chops just about anywhere and a length of pancetta won't be a problem.

I can source a pretty good bean at Nicastro's, more than likely.

they have a wicked selection of sausages! it's inside the grocery store by the food court. the grocery store has a great selection of craft beer too.

I'd wait until it's warm enough to open all the windows. Cassoulet is to the French what baked beans are to North Americans, as far as fart jokes go -- only far, far worse. The beans provide the sound, the sausage and duck bring the fury.

I've also seen, purchased and consumed confit duck from Nicastro on bank st a number of times.

Also, O gourmet website sells a already made Cassoulet in a glass jar from france.
It is sealed like a huge jam jar.

William J walter looks very interesting. Friends in Toronto who used to live in Lyon made their own Toulouse sausage last year to make cassoulet

William J walter is usually at the wine and food show that is at the Leamy Casino-you can buy samples and also product to take home.

Marche Outaouais most likely has some vendors who have Cassoulet and some frozen dishes for sale.
Ferme Saveur des Monts might, or else they chicken and chicken sausages are great.
