Red Snapper Sushi Grade [General]

I'm a former fishmonger in Ottawa, sorry to say you'll only ever find true Red Snapper in whole form here. If you find fillet in a display, I promise you it's Pacific Snapper with the wrong sign marker. Any restaurant who has the nerve to serve Tilapia as Snapper should be outed, and I agree with you on a Tilapia, tastes like mud.

Interesting! I've only seen one sushi place label tilapia (Sushi Umi) on the menu. Agreed, it is very deceptive, especially considering how different the two fish are. Tilapia hatcheries are disgusting, you don't have to keep the tanks clean or worry about dissolved oxygen levels like you would for trout or salmon.

I was just wondering if anyone knows where I can buy sushi grade Red Snapper from either a fish monger or restaurant. It's my favourite fish but it seems hard to find (other than whole).
All of the restaurants I've been to sell tilapia as "Red Snapper" and I'd like to find the real thing. The AYCE places would probably go out of business if they served real red snapper. I'll keep my rant short but IMO tilapia are the most disgusting fish out there (they require zero water quality), maybe second only to Basa (Pangasius).
