If you can get scapes or have enough in your CSA this recipe is terrific tasting. You need about a pound of untrimmed scapes for it, about 350 g trimmed, and it will yield about 4.5 x 250 ml jars. I've made 2 batches, one with dark balsamic vinegar (cheap Bertolli) and a white Vidal wine, and the other with the same balsamic with a robust South African red. It is really good with cheese, even Kraft old as in pic, but even better with 3 yr old Balderson I had today. Also really good on a bbq'd pork T we had last week, might replace my standby port wine jelly as a good accompaniment to red meats.
If you are outta scapes save this recipe for next year. If you have chopped scapes in the freezer like I have I've been assured by the person who gave me this recipe that they will work. I may find out for myself if I need another batch before next year.
