Walnut Paste Recipe (dessert) [Recipes]

I started a new thread as this is not exactly a soy milk recipe but it would be similar but substitute the walnut with soaked soy beans. Simple but rich and tasty!

My Mom's Walnut Paste Recipe

Makes 6-8 portions

- 1/4 cup of white rice soaked in 1/4 cup water
- 2 cups walnuts
- 5 cups water
- 3 medium size rock sugar (or 3/4 cup sugar cane sugar)

Soak rice in 1/4 cup of water for 30-60 minutes

Mix rice and water in blender at high speeds until smooth. Pour back into a bowl.

Mix walnuts in blender with 3 cups of water at high speed.

Bring 2 cups of water to boil in a large pot. Add 3 medium size rock sugar (about 3/4 cup sugar) - add more depending on preference. Turn to medium heat.

Add walnut mix in, stirring slowly.

Add rice mix, stirring slowly until a bit thick. Will thicken when cooled.

Bring to boil one more time then turn off heat.

Is this more like a rice pudding kind of dish?

When I hear walnut paste I thought of the Lebanese pistachio paste I had at Malak a long time ago.

It was made from ground up pistachio, sugar and rosewater and cut into squares.

It is similar to red bean soup. It has the consistency of a creme of leek or carrot.

It can be eaten warm or cold but warm seems to bring put the flavours the most.

Pistachio paste sounds good... Mmm!

Pistachio paste is good, but haven't seen any at Malak lately.
They do not always make the same items every week.

There is some cake they make I have not seen lately that I really li ked- no idea what it is called.

But the pistachio paste, it is very similar to almond marzipan/almond paste but w pistachio and some rosewater I think.
