Anyone know where I can buy demi-glace in Ottawa?

I'm pretty sure that I've seen demi for sale at both The Butchery (in Bell's Corners) and Saslove's. The Glebe Meat Market can probably set you up well, too. Can anybody confirm? It's been a long time since I've gone looking for demi, but I should probably pick some up myself. Buying it yourself is, to me, superior to spending two full days making a cup of it.

Oooh, I'll field this one.

Make veal stock.

Take veal stock.

Add wine and shallots and reduce down to 10% of its original volume.

Use it to bolster every single sauce you make from here on in. So delicious!

You can buy it from Williams Sonoma now, unfortunately we don't have one in Ottawa. Otherwise, you could probably find it at the glebe meat market, or make it yourself... it's not very hard... you just need to find some good veal shank and/or beef shin bones. A tip from Anthony Bourdain: make a lot of demi glace, then freeze some in an ice cube tray for future use. Very handy!

if you want to find a really good recipe for demi look in Madeline Kammans the making of a cook, it takes forever but is very good.
