No designator for beef hanger (steak).

Part of the plate area, I guess. Maybe a sub-cut ? / or too precise a cut ?

Hanger steaks are pretty sexy this days and demand a premium price in the restos's.

From what I see so far for beef anyway they've simply adopted the nomenclature that the Canadian Cattle Industry has been using for some time. I got a bunch of free materials a few years ago from canadianbeef.info and it all looks the same. I'll have to check my big binder to see whether they define hangar steak in there.

I'm so tired of seeing "king hip steak" or "tournadoes of eye filet" and other such garbage massively overpriced.
