Did a quick search and found nothing on the site...anyone know if theres a spot in Ottawa that carries gelling sugar? I know I can get it online but that is my secondary option.

I'd never heard of such a thing before.

Leave it to the Germans.

No, I have no idea where to get it, but you might look at some of the places like Warsaw Deli or other ethnic groceries.

It wasn't recently, but I'm pretty certain I bought it at Loblaws a few years ago. It may be something they only carry seasonally.

Canning section in your local grocery store - it goes mostly by the brand name CERTO here in Canada, made by Kraft.

There are different brands mostly by different canning companies.

Gelling sugar has pectin and sugar. Certo pectin is pectin only, no sugar.

Dr. Oetker has a gelling sugar. I know I've bought it at Loblaws in the past, but can't recall if it is seasonal. You could try contacting specialty shops like the Bagel Shop or Artistic Cake design, if you can't find it there, or maybe one of the Dutch food shops?

Certo has about a dozen different blends.

Some have just pectin and some have a mix of things.

This isn't a "specialty" item... it's sugar, pectin and an acidulant.
