1st Course-App: Tropical mix green salad with fresh coconut, almonds, radish and raisins with mango vinaigrette.

2nd Course-Main: Tamarind ginger glazed chicken with Caribbean rice, broccoli, carrots & red pepper. Served with Papaya Melon Salsa.

3rd Course-Dessert: White chocolate rum cheese cake
with fresh berries and coulis.

This episode we'll whip you around the Caribbean, over to west Africa and back with Chef Carlton and DJ Zattar collaborating on a night of delights as we get summer started with A Taste of the Tropics. Chef Carleton is renown for his Island Spiced line of original spice blends and sauces. DJ Zattar is known as a founder of both TIMEKODE and Tropikalo! with an original set of musical blends and and mixes of his own!
