Zuccinni Casserole [Cooking]

It's that time of year when everyone and their dawg is giving you zukes! One thing we do is grate it up and freeze it in muffin pans (the new silicon ones are very easy to get the frozen stuff back out) then the next day we vacuum seal the frozen stuff 2 per bag. You can then pull it out of the freezer for muffins, bread or whatever.

In addition to that, my wife made a casserole. It's currently in the oven so I don't know yet how it tasted. But basically she sliced up a fairly large zuccinni (football sized) and pan-fried the individual slices first. She also pre-fried some sausage that had been cut up into chunks. Then layers of a tomato sauce, zuccinni, sausage, cheese, more zuccini, more sauce, more cheese. This shot is the layer after the sausage.
