Hi Jazz I discussed my methods in this thread. Generally, i blended a mix of fermented and fresh peppers with garlic, Mexican oregano and cider vinegar. Results were quite good, particularly with latin american-style flavours - black beans, rice, roasted chicken, roast pork, eggs, etc.

My friends thought that waiting 4-5 months to produce 5 really small mason jars of hot sauce was ridiculous, although they did agree it was delicious.

Does anyone have a great hot sauce recipe? I am no too fussy about the combination of peppers...I am happy with what I have.
Any favourite base? Techniques?
