Smoked Chicken and Sausage [General]

I smoked these bad boys about 3 hours yesterday with plum wood, and finished them in the oven on this sheet. Normally I finish on the grill but I ran out of propane.

I find it smokes EXTREMELY well. Way better than Costco even though under normal "sausage circumstances" the Costo ones are far superior (and therefore a lot more expensive)

Yummmm. I’ve never smoked with plum. Did you pick up the wood in Ottawa?
