If you're looking at stainless steel, you might even take a look at soapstone. I talked to these guys last year when I bought a good quantity of soapstone so I could make some 'whisky stones' as gifts.
This is a great material for kitchen counters because it is not affected by heat, has a nice 'soft' stone feel (it's made from 100% compressed talc) and is impermeable to liquids.
