i am doing a some venison pork chops, currently they are marinading in my fridge....the question is whether to leave them in for 24hrs or whether 3 or 4 hours is good enough? i am using Spiedie marinade which has a high vinegar content which helps breakdown the meat and take the "gameness" out of the meat.
I assume just venison chops? Or is there pork involved too? :-)
If it's farmed, I wouldn't think you would need long, I don't really notice the gameness too much when it's farmed. Wild is usually far more gamey but varies from one deer to the next.
