venison [General]

i am doing a some venison pork chops, currently they are marinading in my fridge....the question is whether to leave them in for 24hrs or whether 3 or 4 hours is good enough? i am using Spiedie marinade which has a high vinegar content which helps breakdown the meat and take the "gameness" out of the meat.

i plan on cooking the venison sous vide for a few hours.

I assume just venison chops? Or is there pork involved too? :-)

If it's farmed, I wouldn't think you would need long, I don't really notice the gameness too much when it's farmed. Wild is usually far more gamey but varies from one deer to the next.

just venison chops.....the meat is wild "harvested" last fall....lol

i opted for the a 15 hr marinade and then dropped them in the sous vide at noon for a 6 hour cook.

4brri. What method do you use for sousvide? SVS? immersion circulator? crockpot+PID?

i have a svs - bought it in december and love it.
