The first book, just with a quick glance looks as if it is more about equipment, the modernist cuisine book does look very interesting.
Yan are you using this book as part of your curriculum?
We used Gesslin and most of the time the chef changed the recipes for food demo.

Solstice, unfortunately cooking is only a hobby. I study International Affairs at NPSIA, nothing could be more far removed from cooking than that, but I bought the book as a motivational gift to myself. Thus, it's staying in its package until the semester is over...
