Chocolate or chocolates?
Just thinking of places in the city that have courses and came up with:
Le Cordon Bleu www.cordonbleu.edu has short courses and chocolate is on for April 2nd, 2011.
Artistic Cake Design artisticcakedesign.ca has a chocolates demo class.
C'est Bon Cooking cestboncooking.ca/ is another possibility.
The Urban Element theurbanelement.ca/#/home might but nothing (i.e. no chocolate class) on deck in the near future...though lots of other goodies and a great place to take a class.

Stubbe on Dalhousie, they told me before that they do offer chocolate making classes.
I think I might actually call them to ask about that as it would be fun to do.
Not a class, but I find the recipes on the Eagle Brand foods site, the candy recipies as pretty easy to do and work well.
I have made chocolate fudge a bunch of times and it is super easy and even the microwave version is very easy to do.
