What goes with cranberries? [Cooking]

I'm putting cranberries in my Christmas Turkey brine. I seem to be drawing a blank as to other flavour combos to add. Only thing I can think is citrus.... What else would be nice other than citrus?

A spice component would bring another dimension to the brine. You could try any (or all) of:

Allspice
Cinnamon
Ginger
Star Anise

And a bit of brown sugar to round it all out?

Oooo! Apricot! I just got a HUGE bag of lovely organic apricots. Not sure if I have cardamom on hand. Maybe I can get some in town today.

But I do have Allspice, Cinnamon and Ginger!

Do you think I should crush the cranberries a bit? And maybe chop the apricots in half so the flavour releases better?

Yesterday I had a wonderful lunch with my friend at Play.

I had pork belly / parsnip / cranberry-sage chutney / apples
Oh God,it was so good.
Cranberry and sage,Grilled apple...sweet and sour goes really well with pork...
Chef Michael was in the kitchen!!! I will go back and order same dish again.

Well, AK, next time I roast one of our heritage hog roasts, I will be sure to break out some cranberry/sage/apple to flavour it with. That sounds like it would be amazing with pork.
