Egg Rolls [Recipes]

Anyone ever make egg rolls?

I'm having a go at it for the first time. Reviewed some cookbooks and then came up with this so far for the filling :

- 6 cups chopped cabbage
- 2 cups chopped carrot greens
- 1 medium carrot, grated
- 1 large onion
- 1 whole head garlic that was put whole in a pot roast a few days ago and extracted whole. Just cut the end off and squeeze out all the garlic mush!
- golfball sized chunk of ginger, grated really finely
- 1/2 tsp salt
- 1/2 tsp pepper
- 2-3 tablespoons thai hot chili sauce
- sprinkle of hungarian paprika
- 2-3 tablespoons home made relish from the fridge

Put my large cast iron pan on just shy of 3, with about 4 teaspoons of smokey bacon fat, and fried it all in there until tender.

By my taste buds this is really, really excellent!

Now I have to figure out what to do next :-)

I have some left over pizza / bread dough in the fridge and am wondering how well it will turn out using that on the outside instead of a traditional wrap. I might try one or two like that to see how it turns out.

Just need to let the filling cool a bit now before proceeding.

My personal bias is going to come out here, but your mix needs MUSHROOMS. Black fungus (cloud ear fungus), reconstituted, and diced/julienned finely works well in your mix and adds some texture (crunchy/meaty) and visual appeal as well as added health benefits.

Yup, agreed - definitely needs some decent mushrooms!

EDIT: and I'd probably half the amount of carrot tops next time.
